Hiro has spent nearly 30 years in Japanese food, starting as a chef in Japan and then managing the bento, sushi, produce, seafood, and meat departments at a Japanese supermarket in the U.S. for 12 years. He has opened and run ramen restaurants in Houston, San Antonio, and Kansas City — including Hero’s Ramen x Sushi and KC Craft Ramen, which reached $3 million in annual sales in its third year. He leads our menu, sourcing, and store operations.
